Grape variety : marselan, syrah.
Vinification : The plots are harvested in late October/early November. The grapes are destemmed without crushing before being vatted.
The alcoholic fermentation starts naturally after a few days thanks to the yeasts that are local to the estate. Tasted throughout the process, the wine is worked on (pumping, cap-punching) depending on the level of concentration of the must and the wine. The skin of the grapes is separated from the stems in a process called racking, and are pressed as soon as the first tannins appear.
At the end of the alcoholic fermentation process, the wine is aged for six months in our winery, during which time the malolactic fermentation takes place. Bottling takes place in the spring.

Conservation
The wine can be enjoyed young, but you can also keep it for up to at least 3 years.
